Why wait before drinking your coffee? The secret of degassing

Pourquoi attendre avant de boire son café ? Le secret du dégazage

Your freshly roasted coffee beans have just arrived. You open the bag, it smells incredible… and your first instinct is to brew them straight away.

We get it. But if you really want to get the best out of them, you'll need a little patience.

Not because your coffee isn't good. Quite the opposite. It's just not ready yet.

Fresh coffee, yes… but is it ready?

Specialty coffee is often associated with freshness. And rightly so.

Freshly roasted coffee means more aroma, more complexity, more pleasure in the cup.

But as with food, it's all about timing.

A wine you've only just opened, a piping hot dish, a cheese that hasn't finished maturing… it's not that they aren't good, they just haven't reached their peak.

Coffee works in exactly the same way.

The "fresher is better" myth

Drinking coffee roasted just a few hours ago might sound like the height of quality.

In reality, you're more likely to get:

  • a metallic taste
  • overly sharp acidity
  • an unbalanced cup, sometimes slightly fizzy

That's what's known as an "under-rested" coffee. It has potential, but it's still unstable.

The aromas are there… they just aren't coming through properly yet.

Degassing: what's really going on in your coffee

During roasting, a large amount of carbon dioxide (CO₂) builds up inside the coffee bean.

This gas stays trapped in the bean and gradually escapes after roasting. That's what we call degassing.

Why CO₂ is a problem

When you brew, the water has to soak evenly through the grounds to extract the aromas.

But if the coffee still holds too much gas:

  • the water gets pushed back
  • the extraction becomes uneven
  • the aromas are masked

The result: a muddled, unbalanced coffee that doesn't really show its true profile.

The Loring factor: why you need to wait even longer

At Chronic., we roast on a Loring. And that changes quite a lot.

Unlike conventional roasters that heat the beans by contact, the Loring works by convection, using a flow of hot air.

This gives a more even, cleaner roast… but it also affects degassing.

A denser bean structure

The bean is less "cracked open" during roasting, so it holds on to its CO₂ for longer.

Slower flavour development

The aromas take longer to open up. The coffee can taste closed for the first few days.

A later but longer sweet spot

For filter brewing, some coffees only reach their full potential 21 to 30 days after roasting.

And once they've opened up, they stay stable and delicious for much longer.

The sweet spot: when to drink your coffee

The right moment depends on your brewing method. Here's a simple guide:

Brewing method Ideal resting time Why
Espresso 14 to 21 days Pressure amplifies the effect of CO₂, and too much gas disrupts extraction
Filter methods (V60, Chemex) 21 to 30 days Slow extraction that needs a well-settled coffee
Cold brew 3 to 5 days The long steeping time makes up for degassing

How to tell if your coffee is ready

The bloom test

Pour a little hot water over your ground coffee.

If it swells up a lot with plenty of bubbles, it's still too fresh.

A calmer bloom usually means the coffee is ready.

The taste

A coffee that's ready tastes clearer and more balanced, with distinct, easy-to-pick-out aromas.

Less gas, more precision.

Storage: keeping your coffee at its best

Once it's hit its peak, the aim is to slow down oxidation.

Coffee's enemies:

  • air
  • light
  • changes in temperature

To keep your coffee at its best:

  • keep it as whole beans
  • use an airtight, opaque container such as an Airscape canister or a metal tin.

Good storage is what lets you enjoy your coffee at its peak for longer.

In short

Yes, freshness matters.

But with coffee, as with everything, timing is everything.

Exceptional coffee isn't just fresh coffee. It's coffee that's ready.

And sometimes the difference between a very good coffee and an unforgettable one… is just a few days of patience.
