When does your coffee reveal its full potential?

At Chronic., our coffees are roasted every day. We always try to send you coffees after a short resting period. But sometimes, victims of our own success, they may arrive very fresh.

After roasting, coffee evolves naturally. It gradually releases the accumulated carbon dioxide, which allows the cup to find its balance. Notes that are too bright or pronounced soften, giving way to more precision, sweetness and complexity. Letting coffee rest means giving it the time to fully express itself.

We recommend a minimum rest of 15 days after roasting. For our seasonal and exceptional coffees, the ideal tasting window is generally between 3 and 6 weeks after roasting.

Some coffees reveal their aromas best with a particular brewing method — that’s the recommendation we’re sharing here. Of course, you’re free to experiment with other methods, and we love receiving your feedback.

Kirinyaga, at the foothills of Mount Kenya, is one of the country’s most revered coffee regions. Its volcanic soils, rich in minerals, combined with the wide temperature swings between day and night, create ideal conditions for slow cherry maturation.

This unique terroir produces coffees with a bright, lively profile: lemony acidity, hints of redcurrant, and notes of blackcurrant and pink grapefruit.

The Kamwangi AA is the purest expression of this heritage — a coffee bursting with clarity, depth, and precision, celebrated by specialty coffee lovers around the world.

KENYA, KIRINYAGA COUNTY, CENTRAL HIGHLANDS

The Kamwangi Coffee Factory is one of the gems of the Ngariama Farmers Cooperative Society in Kirinyaga County. Over 1,000 smallholder farmers bring their hand-picked cherries from family plots nestled between 1,600 and 1,800 meters above sea level.

Each lot is processed with remarkable precision: slow fermentation in clean water, double washing, and careful drying on raised African beds under the Mount Kenya sun. Every step is carried out on-site, ensuring a level of purity and clarity few coffees can match.

The result is a refined, elegant cup — a true reflection of Kenyan craftsmanship, where the dedication of the producers can be tasted in every sip.
